The Perfect Green Salad

Had a crazy day yesterday fitting in too much and I ended up arriving home late for lunch with no idea what to prepare - all I had was this desire to use a perfect avocado sitting on my kitchen bench... Here's the pic and recipe for what I came up with. Very few ingredients but packed with flavour and zing!. Big thumbs up for this one.



Green Salad


Prepare the following salad ingredients in a mixing bowl

Baby cos lettuce leaves
Chopped (unpeeled) green apple
Lebanese Cucumber - quartered lengthway then chopped
Blanched almonds, brazil nuts, & macadamia nuts (raw & unsalted of course)
Generous handful of mixed sunflower seeds and pepita seeds

Drizzle the dressing over the salad, then place salad on plates.
Top salad on plates with 2 slices of cold rare, lean roast beef slices per person.
Top with guacamole. Yumm!

Dressing

Mix together flax seed oil, apple cidar vinegar, seeded mustard. Use oil to vinegar ratio of 1:3. I always have a jar of this in the fridge and sometimes top it up with lemon juice.

Guacamole

1 large avocado
Few grape tomatoes
Juice of 1/2 a lime
Fresh coriander leaves
1 shallot
Pulse together briefly in food processor - keep chunky.
Some wish for it, others work for it!
